Summary

Liam Charles and Tom Allen present six professional duos with two challenges. For the first round, they must produce two different types of miniature classics - strawberry tarts and fruit salad. For the second challenge, they must reinvent pineapple upside-down cake and transform it into an incredible fine-dining experience, complete with towering edible showpiece sculptures

Review

The Great British Bake Off moved to Channel 4 and brought with it this strange cousin, where professional pastry chefs are ruthlessly judged by Cherish Finden and Benoit Blin.

I’ve always found Professionals hard to warm to, largely because the creations look so tooth-rottingly sweet and sticky, and it’s all very seriously focused and not much fun (unlike amateur GBBO).

Finden is brutal and cuts the teams down to size, reducing one chef to tears with her brusque “Everything’s just not right”. And an odd pairing of presenters – comedian Tom Allen and nice Liam Charles from last year’s Bake Off – doesn’t help.

But it’s all about the pressure as the six teams of two professional pastry chefs produce French fancies and a showstopper each. The latter is a nightmare of melting chocolate in a hot kitchen.
